Bran Muffins
Ingredients
- 1 cup hot water
- 1 cup shredded wheat
- non-caloric cooking
spray
- 1/2 cup margarine
(at room temperature)
- 2 egg whites
- 1 cup DiabetiSweet
- 1 cup wheat bran flakes
- 2 1/2 cups flour
- 2 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
Preheat oven
to 400F. Spray muffin pans with non-fat cooking spray.
Lightly beat egg whites. Pour hot water over top of
shredded wheat and let stand at least 10 minutes. Combine
margarine and DiabetiSweet in bowl. Stir mixture until
creamy. Add eggs and soaked shredded wheat. Mix well.
Add wheat flakes. Mix gently. Mix flour, salt and baking
soda in a separate bowl. Add to margarine mixture and
mix well. Spoon batter into muffin pan (fill cups about
3/4 full) and bake for approximately 15 minutes. Makes
10-12 servings with each serving (1 muffin) counting
as 1 starch exchange and 1 fat exchange.
